Professional Cookery NC L6

What is special about this course?

This a course that will develop your chef skills with both practical tasks and underpinning knowledge.

The Course is suitable for you if you have completed the professional cookery level 5, or if you have extensive experience in the kitchen and want to further your career by validating your experience.

This course will be taught by blended learning with theory classes conducted either face to face or by video conference, depending on your location. The practical parts of the course will be taught in our professional kitchen in Oban, with a mix of demonstrations, hands on experience and cooking for the college canteen and functions

There will be four separate practical blocks during the year, and you will have to travel to Oban to participate in these. The dates of these blocks will be confirmed at induction.

Entry requirements

having completed the NC level 5 would be an advantage, but we would consider students who have extensive experience in the kitchen.
You would also benefit from having core skills at SCQF level 4.

The course will have both practical and theory elements and will include some of the following topics:
Practical cookery – preparing complex hot and cold dishes
Pastry, developing skills to mor complex patisserie
Health and safety and food hygiene – the  requirements when running a kitchen
Leadership – The knowledge of how to run a successful kitchen.
Enterprise skills – how to develop that business side in you.
Hospitality costing  – how to control the kitchen finances and make a profit
Academic skills – A grounding In academic skills if you wish to progress

How will I study my course?

  • Full Time

Additional Costs

Bursary payments will cover the PPE required for this course.

Students who are in receipt of EMA or Bursary may receive financial assistance towards travel and accommodation costs associated with practical blocks.

What can I do on completion of my course?

On completion of the course you can progress to HNC Cookery level 6 or Hospitality Level 6.

Completion of this course will give you the grounding for working as a senior chef de partie or second chef.
